Shrimp Scampi Florentine

Makes 4 servings

1 pound shrimp
2 tablespoon clarified butter
2 tablespoons chopped garlic
12 each artichoke hearts
2 cups chopped tomato
2 ups shrimp stock
4 cups spinach
1 pound angel hair pasta, cooked
4 ounces grated Parmesan cheese

Heat clarified butter in saute pan until hot, then add shrimp, and sautée until slightly pink. Add garlic, and sautée until fragrant, then add artichoke hearts, and tomatoes, and sautée. Add shrimp stock, (or white wine, or both) and simmer gently. Just before serving, add salt and pepper to taste, and spinach.
