Makes 4 servings 1 pound shrimp Heat clarified butter in saute pan until hot, then add shrimp, and sautée until slightly pink. Add garlic, and sautée until fragrant, then add artichoke hearts, and tomatoes, and sautée. Add shrimp stock, (or white wine, or both) and simmer gently. Just before serving, add salt and pepper to taste, and spinach. |
